Bleu Cheese Crusted Pork Chops

  • 1 Pork Chop (8 – 10 oz)
  • 1/3 Cup Kosher Salt
  • 1/3 Cup Sugar
  • 3 Fresh Rosemary Sprigs
  • 4 Cloves Garlic
  • Dry Rub Seasoning (as needed)
  • 1 Lime
  • 2 Cups Arugula & Watercress
  • Bleu Cheese

Brine Preparation: First, In a pot, combine 3 quarts of water, kosher salt, sugar, rosemary sprigs, and garlic. Bring to a simmer until sugar and salt dissolve. Let the brine cool below 41°F.

Brining the Pork Chop: Next, place the pork chop in a resealable bag. Pour brine over, ensuring complete submersion. Seal the bag and refrigerate for 24 hours.

Grill Preparation: Then, preheat grill to 350°F.

Seasoning and Grilling: Remove pork chop from brine and discard brine. Season pork chop with dry rub. Grill for 10-15 minutes, flipping halfway, until internal temperature is safe.

Adding Bleu Cheese Crust: Top one side of pork chop with crumbled bleu cheese. Melt cheese for 2-3 minutes.
