  1. Begin by letting the wooden skewers soak in water for at least 15-30 minutes. This recipe produces enough for 8-12 skewers. 
  2. Add vegetables to the skewers by alternating between red onion, zucchini, and the different colored bell pepper. Then brush skewers with olive oil.
  3. Preheat grill to medium-high heat. Add skewers and grill for 5-8 minutes per side, or until vegetables are softened and browning around the edges.
  4. Place veggies on a platter and drizzle with balsamic vinaigrette, if desired.

  1. Preheat the grill to medium-high heat. Then, brush the vegetables with 1/4 cup of olive oil to coat lightly. Season the vegetables with salt and pepper.
