Directions

  1. Clean and wash whole fish,

Directions

  1. Add water, sugar, salt, rosemary and garlic to pot and bring to a simmer
  2. Cool until below 41 degrees.
  3. Place cleaned ribs in a bag with the bring, make sure it is completely submerged.
  4.  Allow to brine for a minimum for 8 hours
  5. Preheat grill to 225.
  6. Remove ribs from brine and season all sides with dry rub
  7. Place on grill and allow to cook, low and slow for 2 hours (Time will vary depending on the type on grill. We Highly suggest the big green egg) You’re looking for an internal temperate off 170 degrees.
  8. After two hours begin basting the ribs with chipotle bbq sauce on both sides every 20 minutes (2-3 times).

     

    Remove from grill and allow to rest. Cut, plate and garnish!

Blue Cheese Crusted Pork Chop

Directions

  1. Add water,sugar, salt, rosemary, and garlic to the pot and bring to a simmer.

  3. Place pork chop in a bag with the brine, make sure it is completely submerged.
  4. Allow to brine for 24 hours.
  5. Preheat grill to 350.
  6. Remove pork chop from brine and season all sides with dry rub.
  7. Place on grill and allow to cook for 10-15 minutes before topping one side with bleu cheese.
  8. Allow cheese to melt for 2-3 minutes then remove pork chop from the grill.
  9. Caramelize lime on grill, place pork chop on a plate with arugula, watercress, and pork chop.
  10. Garnish with squeezed lime juice.

How To replace A Stock Burner With An Infrared Sear Burner

1. To change your conventional burner with an infrared rear burner, start by taking out the far left cooking grate, flame tamer, and heat zone divider. Once these components are out of the grill, you can remove the standard burner.

2. To do this, start by removing the metal fastener that keeps the burner in place. Usually, you can remove this with your fingers but you may need to use a pair of needle nose pliers. Once you have the metal fastener removed, the burner will come out easily.

3. The next step is to remove the crossover bar. You will need a Phillips head screwdriver to remove the screw that holds the bar in place.

4. Once you have removed this, the infrared burner slides easily in place. The crossover bar and flame tamer will no longer be needed while using the infrared burner. Simply place the heat zone divider and cooking grate back in the grill and you’re ready for searing!

An infrared burner provides more intense heat compared to a standard burner and will reach searing temperatures much quicker. The great thing about having the infrared burner on your Blaze grill is that it gives you the versatility to sear foods on the infrared burner while grilling vegetables or fish on med-low temperatures at the same time.

ZONE GRILLING

The Twin Eagles grill allows you to cook multiple food items at different temperatures. A divider between each burner breaks the grilling surface into zones. You can operate all zones at the same temperature level or control each zone temperature independently.

Zone grilling also permits you to grill one or two items efficiently and effectively with only one burner operating. Since drafting pushes the heat upward, it’s concentrated in one zone and will not spread throughout the firebox.

HEXAGONAL GRATES

We use 3/8 inch hexagonal stainless steel rods in our grates. They offer over 20% more mass than most grates and 10% more mass than 3/8 inch round rods. The increased mass retains more heat.

The flat surface of the hexagon rods creates more food-to-surface contact over round grates, allowing more heat to be conducted into your food.

    DCS Series 7 Grill

    DCS Grills are powered by 304-grade stainless burners that can range from 300°F to 1,100 °F. The team at DCS tests each burner at the factory, but there is still a low flame setting for manual adjustment if the grill’s temperature gets too hot or not hot enough. Like the Series 9 grills, the Series 7 grills provide an even surface with ceramic rods below the grates that also reduce flames and a rotisserie that holds up to 50 lbs. of food.

    One of the best features of DCS grills is their patented Grease Management System. One side of the cooking grates are curved for delicate foods such as veggies or fish, and the other side has grooves that guide the grease away from the food and into a grease tray, making for easy clean-up.

    Burners and Warranty Info

    ✔  Alfresco & Twin Eagles implement a Stainless Steel U-Shaped Burner that have a limited lifetime warranty against defects. Lynx has now re-designed their burner to be ceramic. The reason being that ceramic burners can potentially distribute the heat more evenly, the downside with this type of burner is that they are prone to cracking over time. We are curious to see if they will continue to honor the lifetime warranty on the burners. These grill companies will not stand behind the lifetime warranty if the burners are misused or abused. To avoid voiding the lifetime warranty on the burners, we recommend cleaning them 2-3 times a year.

    Ignition Systems

    All three grills use electricity to power their igniters. These are more reliable than the battery-operated igniters you see in the older/cheaper grills, they won’t get corroded.

    ✔  Twin Eagles & Lynx uses a glow system that heats a round tube, which then glows orange and ignites the burner.

    ✔  Alfresco uses a spark electrode system which we find makes for better consistency lighting the grill.

    Heat Distribution and Cooking Grates

    All three grills use ceramic briquettes for the heat distribution system. We prefer briquettes over the standard traditional burners; they retain heat more efficiently, which distributes the heat more evenly (uses less fuel).

    ✔  Alfresco & Lynx’s cooking grates are made of heavy-duty, round stainless steel rods.

    ✔  Twin Eagles rods are unique because they are thick, heavy-duty 3/8″ hexagonal grates. The shape of these grates create more mass than traditional round rod grates. These hexagonal grates feature a flat side which allows for a greater food to surface contact. In other words this cooks the food more evenly and allows more heat to reach the food.

    ✔  The rotisserie motor is the feature that sets Alfresco & Twin Eagles above the competition. It is integrated into the firebox and features a chain driven design for consistent rotation of the spit rod. The major benefits are that it eliminates a bulky exterior rotisserie motor and the inconvenience of having to store the rod and motor when not in use.
